Moroccan Delicious Almond and Jam Biscuit Recipe

    • 90g powdered sugar

    • 250g all-purpose flour

    • 50g almond powder

    • ½ tsp salt

  • For the Decoration:

    • 100g almond flakes

    • 1 egg white

    • 1 tbsp glucose

    • 100g cherry jam

Preparation Method:

  1. Prepare the Biscuit Dough: Start by combining the powdered sugar with butter, salt, and baking powder. Gradually add the flour and mix the ingredients together. Then, add the lemon zest, the egg yolks, and almond powder. Continue mixing and kneading the dough until everything is well combined. The dough will be moist and crumbly, so place it in the fridge for about 15 minutes to firm up for easier handling.

  2. Shape the Biscuit: Once the dough has chilled and firmed up, remove it from the fridge. Roll the dough into long sticks, brush them completely with the egg white, and then coat them with almond flakes. Make sure the almond flakes are securely pressed into the dough. Afterward, cut the dough into small biscuit pieces and create a small hole in the center of each piece.

  3. Bake the Biscuits: Place the biscuits on a baking tray and bake them in a preheated oven at 180°C for 15-20 minutes, or until they are fully baked and golden.

  4. Add the Jam: Once the biscuits are baked, remove them from the oven. Prepare a mixture of cherry jam and glucose by heating them together over low heat. Fill the hole in each biscuit with this jam mixture to create a beautiful and delicious finish.
